Eat Veggies – Stay Sharp

Recent studies prove Mom was right – eat veggies and salads to be healthy... AND look up to 5 years younger.

And, it might be added, to slow the mental decline associated with growing older. A six-year study of 2,000 Chicago-area men and women showed that seniors who ate two or more servings of veggies daily appeared about five years younger at the end of the study than those who ate few or no vegetables. A vegetable serving equaled a half-cup chopped, or one-cup of a raw leafy green like spinach.

Leafy green veggies (including spinach, kale and collards) proven especially beneficial. The researchers believed that’s because they contain larger amounts of vitamin E – an antioxidant that fights body-damaging oxidative chemicals produced by our bodies.

Vegetables generally contain more vitamin E than fruits and are often eaten with healthy fats such as salad oils, which help the body absorb vitamin E and other antioxidants. The fats from healthy oils help keep your cholesterol low and arteries clear – both of which contribute to brain health.

Overall, the seniors did gradually worse on the tests over time, but those who ate more than two vegetable servings a day had about 40 percent less mental decline than those who ate little or no veggies. Their test results resembled what would be expected in people about five years younger, Morris said. The study also found that folks who ate veggies were more physically active.  

In another study at Rush University, a group of people over 55 who consumed about a serving of fresh fruit daily had a 40% slower rate of cognitive decline over 6 years than those who shunned fresh fruit-- AND the fruit lovers ended up with the mental sharpness of someone 5 years younger.
